happy columbus day!! [hubs has the day off!]
we are now 3 weeks out...less than 3 weeks, if you're counting.
& it definitely feels like crunch time.
we have been spending a ton of time planning & executing the finishing touches...
...menus, table numbers, programs, etc...etc...etc...
on a good note, i am super excited for my hair & makeup trial on tuesday.
in other news...it's almost monday again!
monday | black bean & rice stuffed peppers
tuesday | chipotle shrimp tacos, mango strawberry salsa & avocado
wednesday | grilled pork chops, green beans & homemade applesauce
thursday | shepherd's pie
friday | roast beef paninis with horseradish aioli
saturday | baked sweet potatoes with chicken apple sausage & caramelized onions
sunday | beaufort stew [a hub's favorite...it's what one might call a shrimp boil]
