menu monday | december 3 - december 9




it's solo menu monday! that's right...hubs is TDY for a few days, so i'm cooking solo.
this means a SEVERE lack of motivation.
meal planning & cooking take work, so, let's be real...when you only have to feed yourself, a bowl of cereal for dinner starts to sound appetizing.
monday | cheating...ordering pizza with my mom.
tuesday | black bean tacos with pico & guac
wednesday | grilled cheese & tomato basil soup
thursday | grilled salmon & asparagus

it's monday, again, already?!

not only is it monday, but it's one of those monday's that is JAM PACKED with to-do's.
so, first on the list...
monday | baked pasta with roasted red pepper sauce
tuesday | beef tacos
wednesday | grilled chicken; roasted root veg + asparagus
thursday | happy turkey day! turkey + all the fixin's
friday | thanksgiving paninis! (i have been waiting 364 days for these!)
saturday | banking on more leftovers/lazy
sunday | testing out some ugly sweater party recipes... (to be announced, if and only if they are delicious.)

homemade applesauce

there is nothing scary about making your own applesauce.
it is so easy.
it's almost easier than opening a jar of store bought apple sauce.

side note: making applesauce this time made me get really excited about making baby food someday. [no i'm not pregs, yet...i don't think.]



applesauce
3lb bag of apples, peeled, cored & sliced
3/4c water
1/4c white sugar
1 cinnamon stick

add all ingredients to a large pot. bring to a boil; reduce to a simmer. cook until apples are soft. [20-30 mins.] pour contents into a blender & pulse until it reaches your desired consistency.

i know it seems like there are 438 types of apples at the store OR your local orchard. [i miss living around one of those.] i think the best for applesauce taste & texture are gala or fuji. go get cooking!

i try to stick to a weekly theme. it makes menu planning a little easier.

meatleass monday [for the most part, we try to stick to this.]
taco tuesday [or anything mexican/tex mex.]
wednesday & thursday...flexible.
panini friday [we need a carb day & we love paninis so much!]
every other saturday date night
sunday dinner with grandma [my mom]

this week, however, i am breaking all the rules & flip flopping all of my days.
monday | palermo's pizza. [we are feeling ultra lazy...& this frozen pizza is bomb.]
tuesday | red curry chicken; basmati rice
wednesday | kielbasa potato skillet
thursday | spinach salad; baked sweet potatoes
friday | thanksgiving potluck @ the squadron. i am bringing a turkey...that hopefully won't look like this:

saturday | burgers with avo, caramelized onions, bacon & chipotle mayo; spicy sweet potato fries
sunday | grilled pork chops; roasted butternut squash; green salad

steak & caramelized onion paninis

so, i have to say, i'm not a huge fan of going out to eat. [hence the meal plans.]
1. [not to pat myself on the back, but] i can totally make 99% of meals we eat out, in our own kitchen.
[honestly i think anyone can! as long as you can follow a recipe, you're half way to becoming a chef.]
2. i can do #1 for a fraction of the cost we would pay out.
3. it's way more comfortable at home.

thursday night, major barber & i went out to eat with a couple of good friends & a few guys from out of town.

leaving the men up to picking the location, they chose a steak house.

[disclaimer: i hope everyone appreciates my candor...i wouldn't normally discuss dollar amounts like this, but i just want to break it down now on the reals.]
our bill [including tip & a couple drinks for hubs] was $125!!

i don't know about you, but that's a week of groceries in our house.

after two loaves of bread & butter, i took 3 bites of my HUGE ny strip steak entree, & i was full.

SO...that leads me to...
[actually, last night...AND breakfast today!]


steak & caramelized onion paninis
2 slices fresh italian bread
2 slices sharp white cheddar
1/4 c caramelized onions
2 oz leftover steak, thinly sliced
2 oz butter, softened

butter outside of bread. inside, layer cheese, steak, onions, cheese. [i always do a top & bottom layer of cheese in my paninis, because it helps hold everything in.]



cook in a panini press, or in a frying pan over medium heat,  until golden brown.

after dinner, there was STILL leftover steak!! benjamin was positive it was for him, so he sat patiently waiting. [he never got it.] instead, i cut it into a small dice &, along with the leftover onions, saved it for a saturday morning breakfast scramble...& made 1 restaurant meal into 3.

brown sugar acorn squash

OH MY WORD... she's back!
and she's...MARRIED!

i am terribly embarrassed that i have neglected this baby blog, but my excuse is valid. i was planning a wedding while housing all of my in laws. [needless to say, i was a busy lady.]

that being said, i am officially signed, sealed, delivered, mrs. barber. no big deal! i am certainly not the first or last to say this, but i never want this over-the-moon-head-in-the-clouds phase to wear off...the one where you can't stop saying "my husband."

so, now that i'm home and doing my housewifery, i am also going to keep up with this blog project. i. will. be. a. blogger. [not striving to be one of the popular, cool kids; just the kind who starts a project & sticks to it.]

so, onto...
holy moly. this is a treat. being off the wedding diet wagon means carbs & fat served in a bowl of deliciousness. growing up, this was our mom' way of sneaking veg onto our plates. now i know better, but it's still supremely awesome next to it's friends, a juicy pork chop & fresh, steamed green beans.


brown sugar acorn squash
2 acorn squash, cut in half lengthwise & seeded
1/4c h2o
1 stick butter [don't judge me.]
8 T light brown sugar

preheat oven to 350°F. place squash halves [two at a time] face down, in a 8x8 glass baking dish. fill dish with 1/8c water. microwave on high for 7 minutes. take out of micro [caution: HOT!!] & flip over into 9x13 baking dish. [repeat with other halves.] fill each half with 2 T butter & 2 T sugar. bake for 20 minutes, or until sugar is melted.

happy columbus day!! [hubs has the day off!]

we are now 3 weeks out...less than 3 weeks, if you're counting.
& it definitely feels like crunch time.

we have been spending a ton of time planning & executing the finishing touches...
...menus, table numbers, programs, etc...etc...etc...
on a good note, i am super excited for my hair & makeup trial on tuesday.
in other news...it's almost monday again!

thai lettuce wraps


this is one of our newly discovered favorites!! it is "paleo" [if that's your thing...i'm not that i'm trying that again, because i wind up having more "cheat" days than good days.]...
anyway, it's a nice, healthy, doesn't make you feel gross, kind of meal.
[p.s. thanks rachael ray for allowing me to extremely adapt this recipe to our liking.] 


thai lettuce wraps
1 heart of romaine
1lb ground pork [or turkey]
1 clove garlic, grated
1 T EV olive oil
1/2 medium red pepper, brunoise [what the french is that?! ...it's a fancy way of saying 1/8" cubes]
1/2 jalapeño, brunoise
1/4 medium sweet onion, bruniose
1/4 c cilantro, chopped
tt soy sauce [depending on your umami tolerance.]
tt sriracha [depending on your spicy tolerance.]
1 T brown sugar
1 tsp fresh squeezed lime juice

sautee peppers & onion, 3 minutes, or until onions look clear. in a separate pan, cook meat and garlic in oil over high, 7 minutes. off heat, stir in next 5 ingredients. serve with lettuce. [use the lettuce like a taco shell...]

the beginning of my air force wife life



so, this is my story.

i know that i'm, what some would call, "new to the game," but i've been around as a military significant other for long enough to know something about the life i chose.

i knew from the start that only four months after our relationship began, major barber [captain back then.] was going to deploy for seven months.

that meant that our time apart was going to be nearly double our time together. i accepted this with a strange sense of peace. it felt as though i was destined for this life. i was willing to wait as long as i had to for this man, and he was willing to do the same for for me.

after those seven months, i look at everything through a different set of eyes. the little things, i no longer take for granted---every meal we share as a family, at the same table; every goodnight kiss; even every dirty uniform that i wash, or the mud his boots track through the house---they all mean the same thing, that, right now, he his home.

so what does it mean to be a military wife? honestly the question is almost impossible to answer, unless you have been one, and i'm sure it differs from person to person.

for me, it means accepting constant change---moving across the country [or world], uprooting your life, painting new walls, learning new roads of a new city; making friends with people you would've never known otherwise; not knowing when he will get orders to go TDY; knowing that any plans can be thrown out the window, at a moment's notice.

it means being stronger than you'd ever thought you could be--fixing broken washing machines while he is gone [and not worrying him about it]; choking back the tears when he tells you your 15-minute phone call is almost over; protecting your home and yourself; being his support system from thousands of miles away; being your own support system when communications are poor.

it means being a patriot, filled with such a strong sense of pride for our country that your heart swells every time the Star Spangled Banner is played, knowing that your husband dedicated his life to protecting not only you, but also every other American who accepts the freedoms given to them by others just like your husband; hanging our country's flag high, for all to see; going to every ceremony, meeting, bbq, willingly, not because "you have to," because you know it is full of others who are in the same boat as you and your husband.

it means experiencing kinship like you never knew you could. sharing a bond with other military spouses, even if you thought you would never have a friend like them; having an instant connection, feeling like you've known each other forever, with women you've just met, simply because they chose the same life as you; knowing that you are not alone, and you will always have a shoulder to cry on, dinner on the table, an "emergency" coffee date, if you ever need any of those things while he's away.

opinions may vary, but mine is strong: the day we started dating, and i knew i was going to spend forever with this man, i "joined" the military. i chose a life of selflessness and duty to our country, but also one of adventure and experience. a life of being the "commanding home officer," holding down the fort on the home front, waiting for my troop to walk through the doors and say, "i'm home," again.

my neglect of this new baby project of mine makes me feel like a bad newb blogger...well, i can explain! we went to walt disney world: where dreams come true!! [& bacteria and viruses cover everything.] i swear, if i wasn't already the biggest germaphobe i know, i definitely am now.

NOTE TO ANY & ALL FUTURE DISNEY TRAVELERS: [this is 100% serious...] take clorox wipes & wipe every ride you go on...every seat you touch...the soap dispenser handles [you know those things are covered in e.coli right?]...menus...maps...every childs' hands that are near you...everything.

or else...you will end up like me last week.

a bride's guide | RSVP cards


there are so many teeny tiny details that go into planning this huge, spectacular day. [had i known this fun fact, i may have considered an elopement. just kidding. kind of, but not really...] there are certain things that i spent hours upon hours searching for. most have to do with wedding etiquette.

i know i'm not the only bride with questions, so i hope i can help even one other bride find some answers.

today i'm going to tackle RSVP cards. we are one week past our "due date." i wish someone would've told me that you can't expect everyone to send their RSVP card back, [even if you affixed a stamp and printed your address on every single card.] people are busy, they lose it, forget about it, leave it in their car, drop it in a gutter, etc. even i am guilty of this mortal sin. [one which i promise to never commit again.]

regardless, you should always include one in your formal invites anyway if you are following proper wedding etiquette.

so, on with the tips...


sometimes people don't fill their name out on the line provided, especially if they are regretfully declining...also, almost no one wrote their return address on the envelope. save the headache of trying to figure out who sent it by assigning each guest a number & printing that number on the back of their RSVP card.


make sending it back as easy as possible for your guests. never expect your guests to pay for postage to send your RSVP card back, or to address the envelope themselves.
note: it cost us 1 forever stamp per RSVP envelope. [$54.05 total] 


since we are having a plated dinner, it was important to take dinner orders in advance to get a count for the caterer & to provide the serving staff with a chart of who ordered which entree.

why did we include a line for "dietary restrictions?" 
short answer: we love everyone who is coming & we don't want to kill them if they have a food allergy.


i should also note that these little suckers were a DIY project. my wonderful bridesmaid [who happens to be a graphic designer] helped me create the image for the card [fo free.] i had them printed [fo cheap.] on 100lb white card stock & cut. i ordered my super cute, but unassembled, invitation pocketfold suite from cards & pockets. to address, i ran each envelope through my printer at home...one-by-one. when it 

was all said & done, we saved over $200 by DIYing these suckers instead of ordering them ready-made. [it's all about the benjamins, baby.]

as our wedding date fast approaches, i am honing in on all of my housewifery skills. [holy moly. only 39 days to go until we call each other husband & wife!] that is why i am going to start out this blog with a promise: to post my weekly menu every monday. 

meal planning is one of those tedious tasks that i am working very diligently to master. i know this is a skill that many have already dominated. some may read my blog and laugh at my newb wife mishaps and learning experiences, but as far as others go, maybe you and i are in the same nearlywed boat. either way, i hope we can all share a laugh or [sometimes, not often] a cry, as i document our life as we become the barbers.
